This banana bread is gluten-free, refined sugar-free, oil-free; basically, it's all healthy ingredients. I make this recipe all the time, it's one of my favorites! If i'm craving something sweet, i'll have a slice of this; it automatically fills me up and satisfies me. This recipe is easily adjustable as it's a very basic recipe.
For the sweetener, you'll be depending on the bananas and maple syrup to sweeten up this recipe, so make sure your bananas are very ripe!
For flour, we're using oat flour. It's just oatmeal that's been blended into a powder. (I use oat flour in everything I bake)
I highly recommend smashing the bananas with the back of a fork.
When you add your dry ingredients to your wet:
The bananas on top make this more moist and dense. I've had friends like it with and some like it without. If you don't put the bananas on top, it's more of a bread consistency, which is delicious either way!
1 3/4 cups of oat flour
2 tsp baking soda
1 tbsp cinnamon
1 tsp nutmeg
3-4 mashed bananas
1/2 cup milk of choice
1/3 maple syrup
1 tsp vanilla
1 tsp apple cider vinegar
(optional) - walnuts or chocolate chips
Preheat oven to 350 and bake 40-50 min
In one bowl - mix in all dry ingredients.
In a separate bowl - mash 3 bananas, add in the rest of wet ingredients.
Slowly add dry to wet.
Grease pan with coconut oil spray. Pour, add sliced banana on top.
